Of course, there is an electric engine ECU. It acts as a DC-DC converter that generates three-phase DC+ and DC- voltages. Torque corresponds to current, speed limit corresponds to voltage. The torque is controlled/limited by the pulse width ratio of the IGBT driver control. There must be a map of these limitations. A one-dimensional measurement of I_max or t_on_max depending on the rotation speed should be sufficient.

To output more power of the EV system, so I am guessing there's an ECU that controls this?

No.

As far as I know, there is no solution for programming the e-machine control. It is Continental electricals, they use the e-machine control. The Otto engine power can be increased a little, but most of the time the transmission control is also limited. If BRABUS uses manipulation of the commonrail pressure box, the boost will be bad. This method worked 20 years ago, but not now.
