Depending on the year of manufacture, there are two ways: on early ones, this was done through the instrument panel itself, on later ones with a multi-wheel, this was done through the steering wheel. What type do you have?
The time is set automatically from COMAND using Navi. If you have DAS developer or Vediamo you can try coding IC to manually set the time with the steering wheel buttons by adding a clock menu.
Of course, it makes sense here to first take Xentry "from those days", use an old laptop that still runs XP, and install the 2013 version (you have what the admin provided in the form of an Acronis Image). For such defects you use this old version as a developer and there you can see the problem and adjust the time. Explaining why this is so would be a very extensive topic.
