I have an interface installed which cost me around £200. It is very easy to install yourself. It also appears to be activated by coding, but as far as I can tell the connection to Mercedes' servers must be disabled somehow to avoid erasing the coding and therefore losing some of the car's functionality.
If you're getting a wired CarPlay interface, there are plenty of good wired wireless adapters available online for around £80. It seems rather odd that a 2020 car, also from Mercedes-Benz, doesn't have CarPlay as standard when most cars below and above its price do.
