It is compatible with Atmega chip, but does not support cars from 2017/2018.

Using the Atmega162 chip and this version of VCDS, I was able to diagnose a 2017 Golf 7.

Yes.

The Atmega processor is valid until 2016, it is not a real version 2.
The real HEX-V2 has an ARM STM32, it typically supports MQB and the later version MQB2, and it is even assumed that it will be possible to update it.

This should not be a problem if you are using an Atmega162 chip.

You need to know what chip is installed inside. This will definitely work for an Atmega. If it's an ARM chip, I know of three loader versions. Also, if it's a Fly cable version, it can only be locked to one software version.

It works with my Atmega162 clone, but the updater doesn't have an interface. Is there a way to update my cable?

To update the cable, you'll need the full loader package. I'm pretty sure a simple Google search will yield results.
